
The winning creation combined Torta Inés Rosales with carne pibil, pickled onion, quail egg, and verdial olive mayonnaise — blending Andalusian traditions with regional ingredients in one bold bite.
Head chef Visitación Casado Casado explained the culinary vision: "We wanted to combine unique products like Torta Inés Rosales and carne pibil with the distinctive flavours of our region, such as Verdial olives."
The Ruta de la Tapa is an annual celebration of Periana's culinary creativity. Restaurants across the village compete to serve the most inventive tapa at an accessible price, with locals and visitors voting for their favourite. This year's edition drew hundreds of participants and confirmed Periana's growing reputation as a gastronomic destination in the Axarquía.
Due to popular demand, the award-winning tapa has been added to the permanent menu. Guests can enjoy this dish alongside other Mediterranean and Andalusian specialties while taking in the views over Lake Viñuela.
